Experience an authentic taste and culture of Mexico with dinner at La Joya. The restaurant features upscale Mexican cuisine with fun and vibrant nightly entertainment. The live 10-piece Mariachi band visits each table to perform traditional music and singing. In addition, visit La Joya for a before-dinner tequila tasting for a truly immersive cultural experience.

Le Basilic

Meet the Chefs at Grand Fiesta Americana
Chef de Cuisine, Mariana Alegría Gárate
Chef Gárate oversees Le Basilic Restaurant. She won the coveted Loredo Medal while earning her Master’s Degree in gastronomy with a focus on Spanish, Italian and Mexican cuisine. Chef Gárate then followed up with a specialty in French cuisine at Monte Carlo’s Lycée Technique et Hôtelier de Monaco.
Gárate has added her signature dish to the menu: Suckling Pig Confit With Jus de Antique Mustard and Sweet Potato Layers that offers guests intense flavors and textures.
Chef de Cuisine, Gerardo Corona
Overseeing La Joya restaurant, Chef de Cuisine, Gerardo Corona serves authentic Mexican cuisine, which represents the best of the country’s various regions. His culinary passion is fueled by his childhood memories of his family’s off-the-beaten-path travels. These include visiting bustling markets in Oaxaca or roasting “jilotitos” (fresh baby corn) on a campfire in the Sierra Madre.
Executive Sous Chef Juan Antonio Palacios
With a strong passion to delight and surprise though his cuisine, Executive Sous Chef Juan
Antonio Palacios brings 18 years of experience as co-captain of the resort’s entire food and beverage operations.
Palacios gained his early experience in New York City. He worked at 5 Ninth Restaurant
in the trendy Meatpacking district, and with acclaimed Chef Gabriel Kreuther at The Modern in the MOMA, among other notable positions.
Gem Spa
The Coral Beach Gem Spa at Grand Fiesta Americana Coral Beach boasts innovative treatments inspired by gemstone therapy, and a dramatic 90-minute 10-step hydrotherapy ritual. The spa design features luminous Italian mosaics, sand marble and expansive water features that cascade over black granite.
A signature treatment includes the Seventh Wonder Luxury Massage. This is an 80-minute massage with seven quartz stones placed on the seven corresponding chakras of the body along with the use of aromatic oils.
Coral KidZ Club
Children could easily spend all day at Coral KidZ Club at Grand Fiesta Americana! A wide range of activities for children 3-12 include indoor games like cooking classes, cookie decorating, and board games to outdoor fun like building sandcastles, capture the flag, and volleyball.
Activities for children from 3-5 years old may include musical chairs, duck-duck goose, and face painting. The KidZ Club features an enclosed water play area with an outdoor slide. Lunch is served during KidZ Club from 1-1:30pm.
Coral KidZ Club is open seven days a week from 10am-6pm. There is also a night session / camp from 7-10pm.
