La Pergola

Their famous menu is accentuated with a wine list that comes from a cellar with over 70,000 world-class bottles, a water list featuring 45 choices, authentic Italian oil and balsamic vinegar from the best local producers, as well as the finest Mediterranean-sourced produce.

Guests will enjoy innovative cuisine, surrounded by classic pieces such as a rare Aubusson tapestry, 18th century bronze candelabra, and a stunning set of hand-blown glass by Emile Gallé.

Uliveto Restaurant

Uliveto restaurant features regional Italian cuisine with a spectacular terrace overlooking the landscaped outdoor pool and park. The restaurant serves a full menu of Mediterranean and international dishes.

Imperial Club

Rome Cavalieri, A Waldorf Astoria room Hotel is dedicated to providing their guests with memorable experiences that are both luxurious and sustainable. The hotel was the first in Rome to achieve the prestigious Green Key certification.

To reduce food waste, the hotel partners with local nonprofit Equoevento to supply leftover bread to a local brewery, Birrificio Vale la Pena. The brewery uses the waste to create its own beer.

At the hotel property, engineers reduced water consumption by 20% over these past three years through a range of measures. These measures include optimizing the property’s irrigation schedule, and swimming pool water consumption.
